He encourages restaurant managers to compare more than price of a single item when choosing a supplier. Often times, larger suppliers may charge more than the little guy, but paying the extra few dollars may be worth it depending on the benefits you're offered. If a small supplier is offering a discount but requires a cash payment upfront, it might be in your best interest to choose a larger supplier that makes ordering and delivery easy being a "one stop shop" and offering 30 day credit.
